One of our biggest goals at Inter-Faith Food Shuttle is to help our neighbors not only get access to food but also understand how to make meals that are nutritious and beneficial for their health. By sharing nutritious recipes crafted by our culinary team, we’re teaching our community that healthy eating can be easy, affordable, and full of flavor. Healthy food doesn’t have to be bland or out of reach. This Roasted Cauliflower Salad is a perfect example of how healthy eating can be both simple and full of flavor.
This recipe was crafted by our Culinary Apprenticeship Student, Gavin Brown.
What You’ll Need:
4 lbs. cauliflower (cut into florets)
1 zucchini, sliced
1 squash, sliced
6 oz. olive oil (for roasting)
4 cups cherry tomatoes, sliced
1 cup red onion, sliced
1 cup peppers, julienned
16 oz. feta cheese, crumbled
1 cup fresh basil, chopped
8 lemons, juiced (and 1 zest)
2 tsp kosher salt
2 tsp ground black pepper
8 garlic cloves, minced
1 cup extra virgin olive oil (for the dressing)
Directions:
Preheat your oven to 425°F (220°C). Toss cauliflower, zucchini, and squash with olive oil and spread them out on a baking sheet. Roast for 20-30 minutes until golden and tender.
In a large bowl, combine the roasted vegetables with tomatoes, onions, peppers, feta, and basil.
In a separate bowl, whisk together olive oil, lemon juice, zest, garlic, salt, and pepper for the dressing. Drizzle it over the salad and toss to combine.
Serve immediately, or store in the fridge for later enjoyment.
